Many clients with GAPS are susceptive to gamy smell. I found that when those animal based foods are marinated in probiotic foods, they are purified by good bacteria. Therefore, those foods become much more flavorful and easier to digest. Below is some idea of marination.

Miso and Ginger juice MARINATED PORK TENDERLOIN

One long piece of pork tenderloin

Marination:

1 Tablespoon of Miso (Organic, non-pasteurized, and must be fermented for more than 3 years; however, if you have a soy allergy, you can not use this recipe.)

1 teaspoon of freshly squeezed ginger juice or fermented ginger brine.

2 or more cloves of garlic crushed or grated

Miso is salty so, you do not need salt but you can add some salt if you want.

Mix all the ingredients and massage the pork with the marinade until equally distributed over the entire surface.

Cover the container and leave it about 20min to over night in refrigerator

Cooking:

Bake 30-40 minutes at 400 degrees, or until pork is thoroughly cooked

LEMOM JUICE MARINATED CHICKEN

Two medium sized boneless chicken breast (each piece cut into thirds)

Marination:

The juice and zest of a half lemon

1 Tablespoon of Fermented Ginger Brine or Fermented Lemon Brine

2 cloves of garlic crushed or grated

1/2 teaspoon of sea salt,

black pepper if you want

Mix the ingredients and massage the marinade over entire surface of chicken

Cover the container and leave it about 20min to over night in refrigerator

Cooking:

Place chicken in baking dish, and place in oven for 25-30 minutes at 375 degrees, or until thoroughly cooked

 

JAPANESE STYLE MARINATED CHICKEN WINGS

16 chicken wings

Marination:

¼ cup of Tamari soy sauce (Organic, non-pasteurized, and must be fermented for over 3 years; however, if you have a soy allergy, you can not use this recipe. Also most soy sauces have wheat flour as one of the ingredients. Tamari soy sauce should not have wheat; however, always check the ingredients and make sure that.)

1 teaspoon of squeezed fresh ginger juice

2 cloves of garlic crushed or grated

1 teaspoon Shio koji

Shio koji and Soy sauce are salty so you do not need salt but you can add some salt if you want

black pepper if you want

Mix the ingredients and massage marinade over entire surface of chicken wings

Cover the container and leave it about 20min to over night in refrigerator

Cooking:

Place chicken wings in baking dish and cook for 30 to 45 min. at 375 degrees until chicken wings are thoroughly cooked.

SOPHISTICATED LATINO STYLE MARINATED PORK

l lb. of pork tenderloin

Marination:

Juice of 1 whole lime,

1 tablespoon of fermented ginger brine or fermented lemon brine

½ teaspoon Oregano

½ teaspoon Thyme

2 cloves of garlic crashed or grated

1 to 2 teaspoon of sea salt, pepper to taste,

Mix all the ingredients and massage marinade of the entire surface of pork

Cover the container and leave it about 20min to over night in refrigerator

Cooking:

Place in baking dish and cook for 30 to 40 minutes at 375 degrees or until thoroughly cooked
