Banana Pound Cake

A Baking recipe use nuts flour for baking instead of wheat flour and raw honey and ripened banana instead of sugar.

I introduce you my basic pound cake recipe.

Ingredients:

1 cup almond flour

1 cup hazel nuts flour

1/2 coconuts flour

3 eggs separated

1/4 cup melted butter

and some more butter for greasing the pan.

2-3 tbsp   raw honey

3 very ripened bananas

Cooking Step:

  1. Preheat the oven 325ºF.
  2. Mix three flours in a big bowl.
  3. In a food processor,  mix well peeled and chopped bananas, egg yolk, honey and butter.
  4. Then combine the  mixture into the flour mixture with a spatula.
  5. Beat the egg white till stand well on the top of beater ( an electric beater )
  6. Just gently and lightly mix the beatened white eggs into the mixture with a spatula.  Do not mix too much.
  7. Pour the mixture into a greased ( by butter) 9×5 loaf pan.
  8. Bake about 1 hour till the center is baked enough until a toothpick inserted in the center comes out clean.
  9. Let it cool about 15min. and  move the cake out of the pan.
  10. Cool and dry for at least for a few hours .  But the next day, the taste get better.  If you keep in a refrigerator, it will be OK up to 4-5 days.
